Client initial brief

To bring back to life an iconic landmark of Lyon’s gastronomy, Le Cazenove by Chef Pierre Orsi, while preserving its soul.
The project founders, Jacky Gallmann (former director of Brasserie Georges) and Frédéric Laffay, wanted to create a new restaurant — Le Bouchon Alsacien — blending the heritage of Le Cazenove, the convivial spirit of Lyon’s bouchons, and the warmth of Alsatian winstubs.

Challenges or constraints encountered

The renovation of such a historically rich venue presented several challenges:

  • Preserving the identity of Le Cazenove — cherished and well-known among Lyon’s residents — without altering its essence

  • Working within a tight schedule: just one and a half months of construction

  • Coordinating several master craftsmen, each with their own unique expertise

  • Incorporating noble materials such as lime plaster, solid wood, leather, and premium upholstery fabrics

  • Harmonizing all interventions to create an atmosphere that is both authentic, elegant, and timeless

Solution proposed and implemented

The Fit-out Division oversaw the entire project, ensuring a balance between heritage preservation and technical precision. Our work focused on:

  • The complete renovation of the flooring and the installation of new parquet

  • Painting and lime-based plaster finishes

  • The coordination of all trades involved

To preserve the spirit of the place, we collaborated with passionate artisans and artists:

  • David Beltramelli, interior architect and designer, a strong advocate of French craftsmanship

  • Jean-Michel Bitsch, Master Upholsterer and Meilleur Ouvrier de France, responsible for refurbishing the seating benches

  • Jérémy – Atelier PAR ICI, for the hand-painted signage
